bbq pulled pork sandwiches...

...minus the bbq part! Anytime I go to a BBQ place I always order a pulled pork sandwich and I've been wanting to make my own for a while now so I went searching on trusty ol' AllRecipes.com for a good recipe. Decided after reading many a review, that I would use my Crock Pot...here's what I did:

(1) I took my 4.25lb Pork Roast (bone-in) and put it in my Crock Pot with what remained of my beef broth (probably about 12 ounces) and half of a bottle of beer. (Pork Roast is so cheap, who knew? Only about $0.60/lb)

(2) I set that sucker on High and left it for almost 3 hours (AllRecipes said to cook on high for 4 hours) but then we were leaving the house so I flipped the roast over (the liquid only came up about halfway) and turned it down to Low.


(3) When I got back, 3.5 hrs later, I put the pork in a large bowl (it was like butter - just fell apart) and shredded it with two forks.

(4) I mixed half of the pork with Jack Daniel's Original BBQ Sauce (for me) and the other half with Stubb's Spicy BBQ Sauce (for the BF) put the mixtures in separate cake pans and baked at 350 for about 20 minutes. I thought this step was weird at first but I totally get it! It dries out the pork a little and gives the ends more of a flame broiled BBQ texture. (although I noticed today upon reheating the pork that its just as easy to put the pork on the bun, stick the open sandwich in the toaster oven and hit toast...saves tons of time and energy)

(5) Enjoy the melt-in-your-mouth amazing-ness! This would be great for a party, makes enough for about 8 people.



Now, in other news....

My Valentine's gift from the BF was a planter box so that I can start a vegetable garden (let me just reiterate how there is nothing to do in Alabama). Anyways we went out on V-day and got all the wood, then spent about 2 hours putting it together. But it's beautiful! The next day I ordered a bunch of vegetable seeds, and a few plants, from Gurney's which should arrive over the next few days.

Today we finally sealed my planter box and therefore will be able to fill it with soil and start planting in a few days! (I just need to talk the boyfriend into making a few more)

We'll soon see whether or not I have a green thumb...I'm hoping it works out, surprisingly the produce around here is awful.
