Crepes are (or rather, were) something of a mystery to me. I came across a recipe on allrecipes and since we had strawberries in the house, I decided to try it out. How hard could it be? ....Turns out: EASY!
The Recipe:
4 eggs
1 1/3 cup milk
2 tbsp. melted butter
1 cup flour
2 tbsp. sugar
1/2 tsp. salt
Beat eggs, add in milk and melted butter. Dissolve sugar and salt then mix in flour a little at a time. It's hard to get all the lumps out, so you could mix it up in a blender but I just used my trusty KitchenAid hand mixer and set it on pulverize (don't you wish that was a setting?).
Once you're lump free; heat your non-stick pan up to about medium. You could rub a little oil or butter in the bottom but my didn't stick at all -wait- what's the definition of non-stick again?
Now, just accept that you'll have to sacrifice the first one or two to the cause. I say, eat those while you finish the rest and no one will be the wiser! I had about a 10-inch pan and used 1/3 cup of batter. Pour it in the middle and swirl it around the the edges. The less-hot your pan, the easier.
Just for a visual (hey, they always help me!) I had it set between the four and the six while my pan heated up, then after the first crepe, I turned it down to where you see in the picture. I experimented and later turned it to where it bordered on 'simmer', those took a while before I could flip them but the color was perfect!
So you've poured your batter, swirled in and now you have a giant crepe to flip. Don't worry. Let the crepe cook until the color lightens on top and looks dry...okay, go ahead, touch it...Dry? Good.
Now take a spatula (preferably the non-stick silicone variety) and slide it slightly under all the edges. Then slide your spatula under and try to pick up the crepe, it shouldn't rip at this point. And...FLIP! It's fine...use your fingers. If any parts fold under just fix it, your crepe should be so cooked at this point that it won't stick to itself. Cook for maybe 30 seconds on the second side, just enough to get a nice color (go on, take a peek)...and tah-da!
